The Basic Process of Prep & Pull

When it is prep time, ingredients are washed, cut, portioned, and then put away the necessary ingredients based on projected sales volume. These prepared ingredients are organized and labeled to grab during the next service. When orders come through the POS system, staff will "pull" needed ingredients from the prep station and then combine them for the dish. This system creates faster service, fewer errors, and a greater level of quality during rushed times and would be used during high sales volume periods.
