Dwell time is defined as the length of time a guest remains at the restaurant from entry to exit. It is an important operational metric for restaurants in measuring customer behavior, table occupancy, and efficiency of operations.

How Does Dwell Time Work in Restaurants?
A restaurant is always aware of how long a table is occupied, or how long people stay at the restaurant in general.
Below is the usual flow-
- A customer enters a restaurant, is taken to a table, and seated.
- The time they are seated is logged into the POS system.
- They order, consume, and pay.
- They leave once the table has been cleared.
- The bill is calculated and generated.
This is referred to as the customer dwell time.
